This recipe is a quick and easy recipe for making Japanese stir fried noodles, the following recipe is suitable for 2 people but can be easily altered for larger numbers. The key ingredients are the Yaki Soba noodles which come with there own seasoning powder. Yaki Soba Noodles can be purchased from any Japanese grocery store or well stocked Chinese or Korean market.

Ingredients

  • Fresh Yaki Soba Noodles - 2 packs
  • Beansprouts
  • Pork Mince
  • Ao Nori Powder
  • Water 5 tbs

Method

  1. Add the pork mince to your wok or frying pan and stir fry until the mince is lightly browned.
  2. Add the beansprouts to the mince and fry for 2 more minutes.
  3. Add the Yaki Soba noodles and gently loosen with a pair of chopsticks, once loosened add 5 tbs of water to the pan and cover. Once all the water has evaporated your noodles will be ready.
  4. Serve the noodles and cover with Ao Nori seasoning powder. While difficult to find in many grocery stores outside of Japan, Ao Nori really adds to the taste!

Your site is lovely; the pictures are gorgeous—what a talented husband you have!
I’m just learning about Japanese home cooking and the main book I’m using does not describe “Ao Nori.” Do you have a picture or other information about it?
