Teriyaki Chicken

Japanese grilled chicken sandwich

Ingredients

  • Chicken 500g
  • Soy Sauce 2tbs
  • Sugar 2tbs
  • Mirin 2tbs
  • Oil 1tbs

Method

You can use either chicken breast or chicken thigh, or if you wish any other kind of meat or fish. I prefer to use chicken thigh with the skin.

  1. Mix the soy sauce, sugar and mirin well together in a bowl.
  2. Heat the frying pan and add the oil.
  3. If you are using chicken with the skin still on, then place the skin side down. Leave to fry until the skin has turned a golden brown colour.
  4. Turn over the chicken, cover with a lid and continue cooking for 5 minutes, depending on the size of the portion of chicken.
  5. Remove the lid, and reduce the temperature to a medium heat.
  6. Pour in the Teriyaki mixture leaving to simmer for up to 10 minutes until the sauce thickens. Reduce the temperature as the sauce changes consistency.
  7. Serve with Japanese sticky rice, and finely cut cabbage.

  • 鶏肉 500g
  • しょうゆ 大2
  • 砂糖 大2
  • みりん 大2
  • サラダ油 大1

Method

  1. しょうゆ、砂糖、みりんはボウルに入れて混ぜ合わせておく。
  2. 熱したフライパンに油をしき鶏肉の皮そ下にして焼く。
  3. キツネ色になったらひっくりかえし、蓋をして中まで火を通す。
  4. 火が通ったら混ぜ合わせておいたテリヤキソースを入れて10分ほど弱火で焼いて出来上がり。
