Japanese grilled chicken sandwich
Ingredients
- Chicken 500g
- Soy Sauce 2tbs
- Sugar 2tbs
- Mirin 2tbs
- Oil 1tbs
Method
You can use either chicken breast or chicken thigh, or if you wish any other kind of meat or fish. I prefer to use chicken thigh with the skin.
- Mix the soy sauce, sugar and mirin well together in a bowl.
- Heat the frying pan and add the oil.
- If you are using chicken with the skin still on, then place the skin side down. Leave to fry until the skin has turned a golden brown colour.
- Turn over the chicken, cover with a lid and continue cooking for 5 minutes, depending on the size of the portion of chicken.
- Remove the lid, and reduce the temperature to a medium heat.
- Pour in the Teriyaki mixture leaving to simmer for up to 10 minutes until the sauce thickens. Reduce the temperature as the sauce changes consistency.
- Serve with Japanese sticky rice, and finely cut cabbage.

- しょうゆ 大2
- 砂糖 大2
- みりん 大2
- サラダ油 大1
Method
- しょうゆ、砂糖、みりんはボウルに入れて混ぜ合わせておく。
- 熱したフライパンに油をしき鶏肉の皮そ下にして焼く。
- キツネ色になったらひっくりかえし、蓋をして中まで火を通す。
- 火が通ったら混ぜ合わせておいたテリヤキソースを入れて10分ほど弱火で焼いて出来上がり。
