Japanese street food
Okonomiyaki is a popular street food in Japan. Some people say its like a Japanese pancake. But could also be said to be like a thick omelette or even a pizza.
Ingredients
- 1 cup of plain flour
- Half a cup of water
- 1 Egg
- 2 cabbage leaves
- Belly pork 50g
- 3tbs of cheese
- Half cup of Tenkasu
- Half a cup of dried shrimps
- 1tsp of dashi
- 1tbs of oil
- Okonomiyaki Sauce
- Mayonaise
Method
- Cut the cabbage into very small pieces.
- Cut the belly pork into slices.
- Mix the flower, water, egg, dashi, cabbage, cheese, tenkasu and dry shrimps very well.
- Heart the pan at a medium tempurature and add the mixture to the pan, making a flat round shape, put the pork on top.
- Heat the okonomiyaki on both sides until cooked evenly.
- put the okonomiyaki sauce and mayonaise on top (aswell as katsuobushi and aonori if you have it) If you don’t have okonomiyaki sauce, you could use bull dog tonkatsu sauce.
Tenkasu is the scraps left over from fried tempura. Tenkasu is commonly supplied in packs and can probably be bought at your local asian supermarket… I ate takeaway fish and chips the previous day so asked the man in the shop for some scraps.

That looks awesome. What’s the dark sauce/caramelized something underneath the kastuo bushi?
Hi Marisa, its not a helpful description, but its called Okonomiyaki Sauce, its similiar to a thick worchester sauce… another Japanese sauce which it is similiar to is Bull Dog sauce.
That okonomiyaki looks good. It has been too long since I last made okonomiyaki.
