Bibinba is a very spicy rice dish, which could make a nice change from the commonly eaten fried rice. Its one of my husbands favourite dishes, and has strong individual tastes and textures.

Ingredients

Half a packet of bean sprout

Half a carrot

2 dried shiitake

pork mince 50g

2 eggs

boiled rice for two

2 tbs of Hot pepper paste

1 piece of garlic

1 tsp of salt

1 tbs of sesame

1 tbs of sesame oil

2 tbs of soy sauce

2 tsp of sugar

Method

Pre cook the rice, leaving to cool.

Shred the carrot into very small pieces.

Put the carrot in the microwave for 3 minutes at a medium temperature repeat this for the bean sprout.

marinade both the carrot and beansprouts with half tsp of salt, half pureed garlic, sesame and half tbs of sesame oil.

Place the dried shiitake in hot water for 20 minutes. After 20 minutes cut them into very small pieces.

Put the shiitake into a small pan and add the 1tbs of soy sauce and 1tsp of sugar boil untill sauce has gone.

Heat a frying pan at a Medium temperature, fry the pork mince for 5 minutes, and add 1tbs of soy sauce and 1tsp of sugar, fry until all the sauce gone.

Pouch an egg, and place on top of the rice along with and the vegetables, meat and hot pepper chili sauce.

Enjoy!

If you have a cast iron frying pan, why not fry the rice, leaving some of the rice to become crispy, this gives even greater texture to the dish!

Tenkasu is the scraps left over from fried tempura. Tenkasu is commonly supplied in packs and can probably be bought at your local asian supermarket… I ate takeaway fish and chips the previous day so asked the man in the shop for some scraps.
